Ingredients
  

  • 8 slices thick bread (such as brioche or challah)
  • 8 oz cream cheese (softened)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 4 large eggs
  • 1 cup fresh strawberries (sliced)
  • 2 tablespoon butter (for cooking)
  • to taste serving Maple syrup for serving

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or whisk to blend until smooth and creamy. Set aside.
  • Take 4 slices of the bread and spread a generous layer of the cream cheese mixture on each. Place the remaining 4 slices of bread on top to create sandwiches.
  • In a shallow dish, whisk together the eggs and milk until well combined.
  • Heat a frying pan or griddle over medium heat and add butter.
  • Dip each sandwich into the egg mixture, ensuring both sides are well-coated.
  • Place the sandwiches in the pan and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  • Once done, transfer to serving plates and top with fresh sliced strawberries.
  • Drizzle with maple syrup before serving.

Notes

For a richer flavor, you can add a pinch of cinnamon to the egg mixture.
You can substitute with other fruits such as blueberries or bananas, if preferred.
Make sure not to overcrowd the pan; cook in batches if necessary.
