In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the milk, egg, vegetable oil, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.
Preheat a frying pan or griddle over medium heat and lightly grease it with oil or cooking spray.
Pour about ¼ cup of pancake batter onto the griddle for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface and the edges look slightly dry. Flip and cook for another 2 minutes until golden brown.
Repeat with the remaining batter until all pancakes are cooked. Allow them to cool slightly.
Once pancakes are cool, cut them into quarters. On each skewer, assemble the skewers by alternating pieces of pancake, slices of strawberry, and banana.
Serve the skewers with maple syrup drizzled on top, if desired.
