First, you heat the vegetable oil and sesame oil in your pressure cooker’s skillet mode or on a burner if you got a multi-use cooker. Medium heat works real good.
Then toss in the thinly sliced onion. Stir-fry them for 3-4 minutes until they get nice and translucent. You’ll catch that smell changing right away.
Next, add in the zucchini strips. Stir-fry these for 5-7 minutes until tender but not mushy. You want that tender pull that pressure cookers give you just right.
Now it’s time to mix in your teriyaki sauce, soy sauce, grated gingerroot, and black pepper. Stir it well and cook for 2 more minutes to get all those flavors married together.
Seal your pressure cooker. Wait for the float valve to pop up so you know it's pressurized and working its job.
Cook under pressure for a short time, just enough to get everything tender. Usually about 3 minutes should do it for these tender veggies.
Use the quick release method to let out steam fast and keep that steam cues fast so your zucchini stays crisp.
Before serving, sprinkle sesame seeds on top for texture and a final burst of flavor. Now dig in and enjoy!
