This is a quick pressure cooker recipe for sticky honey garlic chicken noodles that combines sweet and spicy flavors with tender ground chicken and perfectly cooked noodles.

  • 4 cups Coleslaw Mix 170g
  • 2 teaspoons Olive Oil 10g
  • 1 pound Ground Chicken Breast
  • 3 tablespoons Honey 63g
  • 2 tablespoons Chili Garlic Sauce or Sriracha 30g
  • 2 tablespoons Coconut Aminos or low sodium soy sauce 30g
  • 2 tablespoons Chinese Black Vinegar or balsamic vinegar 30g
  • 2 teaspoons Frozen Crushed Ginger Cubes or freshly crushed ginger
  • ¼ cup Water
  • 2 packs Trader Joe's Squiggly Knife Cut Style Noodles or other instant ramen 95g each
  • Chives or Scallions and Toasted Sesame Seeds for serving

  • Bring a pot of water to a boil for the noodles. Meanwhile, heat the olive oil in a large nonstick pan over medium heat. Add the coleslaw mix. Stir to coat in oil and cook until tender crisp.
  • Transfer coleslaw to a bowl and set aside. Add ground chicken to the pan and cook until golden brown before breaking apart and fully cooking.
  • Add honey, chili garlic sauce, coconut aminos, black vinegar, ginger, and water to the chicken. Stir and cook until the liquid is reduced and caramelized.
  • Cook noodles according to their package directions, reserve ½ cup water and drain the rest.
  • Combine the noodles with the chicken mixture in the pan, using reserved water as needed to bring everything together.
  • Garnish with chives or scallions and toasted sesame seeds. Serve hot.

Notes

If you're in a rush, pre-minced ginger or ginger paste saves time. Swap ground chicken for turkey or tofu as desired.
