Start by cooking the rice noodles according to the package instructions. Drain and set aside.
While the noodles are cooking, heat the vegetable oil in a skillet or wok over medium-high heat.
Add the thinly sliced beef to the skillet and cook for about 3-4 minutes, or until browned. Remove the beef and set it aside.
In the same skillet, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add the sliced bell pepper and broccoli florets to the skillet, cooking for about 3-4 minutes until slightly tender.
Stir in the soy sauce, oyster sauce, hoisin sauce, brown sugar, and sesame oil. Mix well.
Return the cooked beef to the skillet and toss everything together for another 2-3 minutes to heat through and combine the flavors.
Add the cooked noodles to the skillet, tossing gently to ensure the noodles are evenly coated in the sauce.
Serve hot, garnished with chopped green onions and sesame seeds, if desired.
