Instructions

Instructions

  • Step 1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Toss in chopped onion and fry till it looks translucent and smells sweet. This kicks off your flavor build.
  • Step 2. Stir in minced garlic and cook just a minute to get it fragrant but not burnt. Don't rush, the aroma is worth it.
  • Step 3. Add rice and stir so all the grains soak in that warm oily goodness. This preps your rice for perfect cooking.
  • Step 4. Pour in chicken broth and tomato sauce, then sprinkle salt, pepper, cumin, and dried cilantro. Bring the whole thing to a boil then drop heat to low, cover tight. Let it simmer about 18 to 20 minutes till rice is tender and broth level drops a bit.
  • Step 5. While rice cooks, season your sirloin steak with salt and pepper. Melt butter in separate pan on medium-high heat and sear steak about 3 to 4 minutes each side. You want a nice crust with juicy middle.
  • Step 6. Take steak off heat, let it rest a few, then slice thin. Fluff your rice mix with fork, plate it up, and top with steak slices. Add queso and cilantro. Wrap in flour tortillas if you want a quick burrito-style meal. You are done, enjoy that dang good dinner.
