Ingredients
  

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • ½ cup sour cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper to taste
  • ½ cup breadcrumbs optional for topping
  • 1 tablespoon olive oil for cooking spinach

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.
  • In a mixing bowl, combine the softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well until smooth.
  • Add the shredded chicken and sautéed spinach to the cream cheese mixture, and stir until everything is well combined.
  • Pour the mixture into a 9x13 inch baking dish and spread it evenly.
  • Top the casserole with shredded mozzarella cheese. If desired, sprinkle breadcrumbs over the top for an extra crunch.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Once done, remove from the oven and let it cool for a few minutes before serving.

Notes

Feel free to add other vegetables like bell peppers or mushrooms for added flavor and nutrition.
This casserole can be prepared ahead of time and stored in the refrigerator before baking. Just increase the baking time by a few minutes if it's coming straight from the fridge.
