- 1 cup orzo pasta Approximately 200 grams.
- 2 cups fresh spinach Approximately 60 grams.
- 1 can (14.5 oz) diced tomatoes, undrained Approximately 400 grams.
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth Approximately 480 milliliters.
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil

Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes, or until the onion becomes translucent.
Increase the heat to medium-high and add the diced chicken to the skillet. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add the orzo to the skillet, followed by the can of diced tomatoes (with juice) and the chicken broth. Stir in the Italian seasoning.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
Once the orzo is cooked, carefully fold in the fresh spinach. Cook for an additional 2-3 minutes until the spinach has wilted.
Taste and adjust seasoning with additional salt and pepper, if needed.
Serve warm, topped with grated Parmesan cheese if desired.
You can substitute the chicken breast with cooked, shredded rotisserie chicken for a quicker version.
