In a bowl, combine hot sauce, sour cream, ketchup, honey, smoked paprika, and cumin. Stir until combined.
Place chicken cutlets in a large resealable bag, pour marinade over. Seal and marinate in fridge for at least 30 minutes.
Heat oil in skillet over medium-high heat. Brown chicken on both sides, 10-15 minutes, till cooked through.
After cooking, let chicken rest for a few minutes.
Before serving, sprinkle with garlic and scallions. Serve with remaining warmed marinade as sauce.

Notes
Cook the chicken at medium heat. Avoid too high of a heat to prevent the honey from burning. Discard marinade used on raw chicken and make a sauce from the reserved marinade. Adjust hot sauce based on desired spice level.
