Spicy Honey-Ginger Chicken Bowls with Yum Yum Sauce

1 ½poundsboneless skinless chicken breasts or thighs
1 tablespoontamari or soy saucefor marinade
⅓ cuptamari or soy saucefor yum yum sauce
2 tablespoonsextra virgin olive oil

⅓ cupolive oil mayo
2 tablespoonsketchup
1 tablespoonWorcestershire sauce
1 teaspoonseasoned salt

In a bowl, mix 1 tablespoon tamari or soy sauce with olive oil, black pepper, orange juice, honey, chili paste, ginger, and garlic. Toss chicken in and marinate for at least 15 minutes in the fridge.
Heat pressure cooker on sauté mode or skillet over medium-high heat. Add chicken and brown for 6–8 minutes per side until caramelized and almost cooked through.
Remove chicken to plate. In a bowl, mix remaining ⅓ cup tamari with mayo, ketchup, Worcestershire sauce, seasoned salt, and cayenne for yum yum sauce. Set aside.
Add ½ cup broth or water to pressure cooker, reseal, return chicken, and lock lid. Cook on high pressure for 7 minutes, then natural release for 10 minutes before slow releasing remaining pressure.
Layer bowls with cooked rice, sliced chicken, cucumber, avocado, kimchi, and wontons. Drizzle generously with yum yum sauce and serve warm.
Notes
Shortcut: Use pre-cooked rotisserie chicken to speed up prep. Swap rice with cauliflower rice for a lower-carb option. Make sauce ahead for best flavor!
