  • 2 boneless, skinless chicken breasts seasoned with salt and pepper
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sesame oil
  • 1 tablespoon minced ginger
  • 1 tablespoon chili garlic paste optional
  • 8 cups chicken broth store-bought or homemade
  • ¼ cup soy sauce
  • 2 tablespoons hoisin
  • 2 tablespoons rice vinegar or lime juice
  • 8 oz shiitake mushrooms thinly sliced
  • 2 packages ramen noodles cooked separately
  • 4 ramen eggs for garnish
  • raw onion thinly sliced for garnish
  • jalapenos for garnish
  • lime wedges for garnish
  • fresh herbs like cilantro or Thai basil, for garnish

  • Season chicken breasts with salt and pepper. Heat the extra virgin olive oil in your pressure cooker pot over medium heat. Cook chicken until browned and fully cooked, about 6 to 8 minutes each side. Then set chicken aside to rest.
  • In the same pot, add sesame oil, minced ginger, and chili garlic paste. Sauté for 2 to 3 minutes till fragrant.
  • Pour in chicken broth, soy sauce, hoisin, and rice vinegar. Stir and bring to a boil. Secure the lid snug with sealing ring.
  • Set to high pressure. Once the float valve pops and it hisses, begin timing for 10 minutes.
  • After 10 minutes, release pressure carefully. Open lid, shred chicken into bite-sized pieces and return to pot. Stir to combine.
  • Meanwhile, cook ramen noodles separately according to package directions. Drain well.
  • Dish out noodles into bowls, ladle hot spicy broth with shredded chicken over top.
  • Garnish each bowl with ramen eggs, raw onion, jalapenos, lime wedges, fresh herbs and Sriracha as desired. Serve immediately.

Notes

Prep your veggies the night before or use pre-minced substitutes for speed. Reheat broth separately and combine with noodles when serving to keep texture perfect. Great with leftover pork or chicken too!
