  • 1 medium yellow onion diced
  • 3 ribs celery diced
  • 1 large carrot diced
  • 2 teaspoons garlic minced
  • 2 teaspoons Cajun seasoning
  • 0.5 teaspoon cayenne pepper
  • 2 pounds russet potatoes peeled and cubed
  • 4 cups chicken broth
  • 0.5 cup heavy cream
  • 1 cup mild cheddar cheese shredded

  • Brown the ground pork sausage in your pressure cooker pot over medium heat until nicely colored. Remove and set aside.
  • Add butter to the pot, then sauté the diced onion, celery, and carrot until tender, about 5 to 7 minutes.

  • Add minced garlic, Cajun seasoning, and cayenne pepper and cook for 2 minutes to release the flavors.

  • Add sliced andouille sausage and cook until browned, about 3 to 4 minutes.
