Southwestern Egg Rolls (Chili’s Copycat)

These Southwestern Egg Rolls are just like the popular appetizer at Chili's, made with chicken, spinach, corn, and black beans. They are crispy on the outside and cheesy, flavorful on the inside. Perfect for any appetizer table or a stand-alone snack!

  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • teaspoon cayenne pepper
  • 1 tablespoon vegetable oil plus extra for frying
  • 1 chicken breast fillet about 6 oz
  • ¾ cup shredded Monterey Jack cheese
  • cup canned or fresh corn rinsed and drained
  • cup canned black beans rinsed and drained
  • ¼ cup red bell pepper finely chopped
  • ¼ cup onion finely chopped
  • ¼ cup frozen spinach thawed, pressed, and chopped
  • 2 tablespoons diced jalapeno peppers
  • 1 tablespoon fresh cilantro minced
  • 6 wonton wrappers or 4 6-inch flour tortillas
  • 3 tablespoons Ranch dressing for dipping
  • ½ avocado sliced for serving
  • 1 tablespoon milk or water

  • Heat your skillet with a tablespoon of vegetable oil over medium heat. Sear your chicken breast till it’s fully cooked through, about 6 to 7 minutes per side.
  • Let the chicken cool down a bit. Then shred it into bite-sized pieces.
  • In a mixing bowl, combine shredded chicken, shredded Monterey Jack, corn, cumin, chili powder, garlic powder, salt, pepper, and cayenne pepper. Mix well.
  • Lay out your wonton wrappers or tortillas. Spoon about 2 tablespoons of filling in the center. Fold the sides over, then roll from the bottom up to seal.
  • Heat vegetable oil in a frying pan on medium. Add egg rolls and fry each side about 3 to 4 minutes until golden brown and crispy.
  • When done, place egg rolls on paper towels. Let cool slightly. Serve with Ranch dip and sliced avocado.

Notes

Make sure the frying oil stays between 350 and 375 degrees F for the best outcome. If baking, put the egg rolls on a baking sheet for 8-10 minutes per side at 375 degrees F.
