- 1 cup cooked black beans drained and rinsed
- 1 cup corn drained (canned or frozen)
- 1 small red bell pepper diced
- 1 small green bell pepper diced
- ½ cup green onions chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- to taste salt
- 1 package egg roll wrappers about 12 wrappers
- 1 cup shredded cheese cheddar or pepper jack
- Oil for frying
In a large bowl, combine the black beans, corn, red and green bell peppers, green onions, cumin, chili powder, garlic powder, and salt. Mix well until the ingredients are evenly combined.
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
Sprinkle a little cheese on top of the filling.
Fold the corner nearest you over the filling, then fold in the sides, and roll away from you to form a tight cylinder. Seal the edges with a little water or use a toothpick or kitchen twine to hold the edges together. Repeat with remaining wrappers and filling.
Heat oil in a frying pan or deep fryer over medium heat.
Carefully add the egg rolls in batches to the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer the cooked egg rolls to a plate lined with paper towels to drain excess oil.
Serve warm with your favorite dipping sauces, such as salsa or guacamole.
For a healthier version, consider baking the egg rolls in the oven at 400°F (200°C) for 15-20 minutes or until golden, brushing them lightly with oil before baking.
You can customize the filling with additional ingredients like shredded chicken or diced jalapeños for added spicy flavor.
