Ingredients
  

  • 1 cup cooked black beans drained and rinsed
  • 1 cup corn drained (canned or frozen)
  • 1 small red bell pepper diced
  • 1 small green bell pepper diced
  • ½ cup green onions chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • to taste salt
  • 1 package egg roll wrappers about 12 wrappers
  • 1 cup shredded cheese cheddar or pepper jack
  • Oil for frying

Instructions
 

  • In a large bowl, combine the black beans, corn, red and green bell peppers, green onions, cumin, chili powder, garlic powder, and salt. Mix well until the ingredients are evenly combined.
  • Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
  • Sprinkle a little cheese on top of the filling.
  • Fold the corner nearest you over the filling, then fold in the sides, and roll away from you to form a tight cylinder. Seal the edges with a little water or use a toothpick or kitchen twine to hold the edges together. Repeat with remaining wrappers and filling.
  • Heat oil in a frying pan or deep fryer over medium heat.
  • Carefully add the egg rolls in batches to the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to transfer the cooked egg rolls to a plate lined with paper towels to drain excess oil.
  • Serve warm with your favorite dipping sauces, such as salsa or guacamole.

Notes

For a healthier version, consider baking the egg rolls in the oven at 400°F (200°C) for 15-20 minutes or until golden, brushing them lightly with oil before baking.
You can customize the filling with additional ingredients like shredded chicken or diced jalapeños for added spicy flavor.
