  • 1 measuring cups and spoons
  • 1 silicone spatula

Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • 1 cup milk
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup honey
  • as needed butter for brushing

Instructions
 

  • Preheat your oven to 400°F (200°C). Grease the muffin tin or mini muffin tin with cooking spray or butter.
  • In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Whisk until well blended.
  • In a separate bowl, mix the milk, melted butter, and eggs. Stir until fully combined.
  • Gradually pour the wet ingredients into the dry ingredients, stirring gently with a silicone spatula until just combined. Be careful not to overmix.
  • Spoon the cornbread batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  • While the poppers are baking, prepare the honey butter by mixing the honey and additional melted butter in a small bowl.
  • Once the cornbread poppers are baked, remove them from the oven and let them cool for a few minutes. Brush the tops with the honey butter mixture while they are still warm.
  • Serve warm and enjoy!

Notes

These poppers can be made in advance and reheated in the oven before serving.
For added flavor, consider mixing in jalapeños or cheese into the batter.
Serve with additional honey butter on the side for dipping.
