Preheat your oven to 400°F (200°C). Grease the muffin tin or mini muffin tin with cooking spray or butter.
In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Whisk until well blended.
In a separate bowl, mix the milk, melted butter, and eggs. Stir until fully combined.
Gradually pour the wet ingredients into the dry ingredients, stirring gently with a silicone spatula until just combined. Be careful not to overmix.
Spoon the cornbread batter into the prepared muffin tin, filling each cup about two-thirds full.
Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
While the poppers are baking, prepare the honey butter by mixing the honey and additional melted butter in a small bowl.
Once the cornbread poppers are baked, remove them from the oven and let them cool for a few minutes. Brush the tops with the honey butter mixture while they are still warm.
