  • 3 cups all-purpose flour or whole wheat or mix of both (360 g)
  • cup sourdough starter discard 100 g
  • 2 eggs large or 3 medium
  • 1 tablespoon extra virgin olive oil 15 g
  • 1 teaspoon sea salt 5 g
  • 1-2 tablespoons water 20 g, as needed

  • Mix flour and salt in a big bowl or on the counter.
  • Add sourdough discard, eggs, and olive oil into a well in the flour.
  • Use fork or fingers to combine wet and dry ingredients until shaggy dough forms.
  • Add water as needed and knead dough 8-10 minutes until smooth and elastic.
  • Wrap dough in plastic and rest at room temp 1 hour or chill overnight.
  • Cut dough into chunks and roll out with pasta machine or rolling pin.
  • Cut pasta into shapes: fettuccine, tagliatelle, lasagna, etc.
  • Boil pasta in salted water for 2-4 minutes until al dente and drain.
  • Toss cooked pasta with sauce or butter and serve hot.
  • Use pressure cooker to warm cookies and scones with quick or slow release.

Notes

Let your dough rest for better texture. For a full fall feast, prep cookies and scones alongside pasta.
