Preheat your oven to 350°F (175°C).
Cook the egg noodles in a large pot of salted boiling water according to the package instructions. Drain and set aside.
In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the meat is fully cooked. Drain any excess fat.
Stir in the tomato sauce, Italian seasoning, salt, and pepper. Let the mixture simmer for about 5 minutes.
In a large mixing bowl, combine the sour cream and cottage cheese. Add the drained egg noodles and stir until well coated.
In a greased 9x13 inch baking dish, layer half of the noodle mixture, followed by half of the beef mixture. Sprinkle ½ cup of shredded cheddar cheese on top.
Repeat the layers with the remaining noodle mixture and beef mixture, finishing with the remaining shredded cheddar cheese on the top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
