Ingredients
  

  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 1 ½ cups raw peanuts
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda

Instructions
 

  • Prepare your baking sheet by lining it with parchment paper and lightly greasing it with oil or cooking spray. Set aside.
  • In a medium saucepan, combine granulated sugar, light corn syrup, and butter. Stir over medium heat until the sugar dissolves completely.
  • Add the raw peanuts and salt to the saucepan. Stir the mixture constantly while bringing it to a boil.
  • Once boiling, attach a candy thermometer to the side of the pan and continue boiling until the mixture reaches the soft crack stage, approximately 270°F (132°C).
  • Remove the saucepan from heat. Carefully add vanilla extract and baking soda, stirring quickly as the mixture will bubble up.
  • Pour the peanut mixture onto the prepared baking sheet. Using the back of a greased wooden spoon, spread the mixture evenly to a desired thickness.
  • Allow the peanut brittle to cool completely, about 30-45 minutes.
  • Once cooled, use a knife or kitchen shears to cut the brittle into pieces.

Notes

Store the soft peanut brittle in an airtight container to keep it fresh.
Adjust the level of sweetness by adding more or fewer peanuts according to your taste.
Be cautious while handling the hot mixture, as it can cause burns.
