Preheat your oven to 350°F and slap some parchment paper down on a baking sheet.
In a big bowl, cream your softened butter with that light brown sugar until it’s smooth and dreamy.
Crack in your egg and splash in the vanilla extract, then mix it up till it’s all blended well.
In a separate bowl, whisk together your flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mix, stirring just until it all comes together.
Fold in your shredded coconut if you’re using it.
Drop rounded tablespoons of dough onto your lined baking sheet, spacing each about 2 inches apart.
Bake for 10 to 12 minutes till the edges turn golden brown. Let them cool a bit on the sheet before moving to a wire rack to cool fully.
