Cook 2 slices of bacon in a skillet over medium heat until crispy. Drain on paper towels.
Mix mayonnaise, Dijon mustard, lemon juice, garlic powder, and smoked paprika for baconnaise.
Season minced beef with salt and pepper. Divide into 4 balls.
Heat skillet on high. Smash beef balls flat into thin patties. Cook for 3-4 minutes on each side.
Top each patty with a crispy bacon slice.
Spread baconnaise on toasted buns. Layer lettuce, tomato, gherkins, patties, and bacon.
Serve with fries or a salad and extra baconnaise for dipping.
Notes
Store leftovers separately. Refrigerate patties, baconnaise, and buns to retain texture and moisture.
