  • 2 slices bacon for baconnaise
  • 125 g whole-egg mayonnaise gives creamy texture
  • 1 tablespoon Dijon mustard adds that tangy kick
  • 1 teaspoon fresh lemon juice to brighten the baconnaise
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika optional
  • 500 g regular minced beef 80/20 lean-to-fat ratio
  • salt to taste
  • freshly cracked black pepper to taste
  • 4 slices cheddar or American cheese
  • 4 toasted burger buns
  • 60 g shredded lettuce
  • 1 tomato sliced
  • gherkins dill pickles

Instructions

  • Cook 2 slices of bacon in a skillet over medium heat until crispy. Drain on paper towels.
  • Mix mayonnaise, Dijon mustard, lemon juice, garlic powder, and smoked paprika for baconnaise.
  • Season minced beef with salt and pepper. Divide into 4 balls.
  • Heat skillet on high. Smash beef balls flat into thin patties. Cook for 3-4 minutes on each side.
  • Top each patty with a crispy bacon slice.
  • Spread baconnaise on toasted buns. Layer lettuce, tomato, gherkins, patties, and bacon.
  • Serve with fries or a salad and extra baconnaise for dipping.

Notes

Store leftovers separately. Refrigerate patties, baconnaise, and buns to retain texture and moisture.
