Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips
  • 8 oz cream cheese, softened
  • cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 box brownie mix About 9x9 inch size; follow package instructions for additional ingredients.

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease the baking dish or line it with parchment paper for easy removal.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Add the eggs and vanilla extract to the butter-sugar mixture and mix until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until just combined. Fold in the chocolate chips.
  • Press half of the cookie dough into the bottom of the prepared baking dish to form a crust.
  • In a separate bowl, beat the softened cream cheese, granulated sugar, egg, and additional vanilla extract until smooth and creamy. Spread this cheesecake mixture evenly over the cookie dough layer.
  • Take the remaining cookie dough and crumble it over the cheesecake layer.
  • Prepare the brownie mix according to the package instructions and pour it over the crumbled cookie dough layer. Spread evenly.
  • Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out mostly clean.
  • Allow the bars to cool in the baking dish before cutting them into squares. Enjoy!

Notes

For an extra touch, you can sprinkle some sea salt on top once they come out of the oven. These bars can be stored in an airtight container in the fridge for up to a week, but they're usually gone much quicker!
