Grab a medium bowl and whisk together honey, lower-sodium soy sauce, dark soy sauce, oyster sauce, Sriracha, Shaoxing wine, garlic, ginger, sesame oil, and salt until it’s all blended nice and smooth.
Pop the chicken thighs into the slow cooker, then pour that sauce right over top making sure every piece gets some love.
Cover it up and set on low for 4 to 5 hours, let it simmer slow and steady till chicken is tender through and through.
Once that chicken’s cooked, remove it and shred with two forks. Don’t rush this part, shredding well makes a big difference.
Put the shredded chicken back into the slow cooker and stir to coat with all that savory sauce.
While the chicken’s lovin’ the sauce, cook your fresh lo mein noodles following the package directions, then drain.
Add the noodles to the slow cooker and toss gently so every noodle gets covered nicely in the honey garlic sauce.
Serve it up hot with some sliced scallions and a sprinkle of white sesame seeds for that nice fresh crunch.
