Ingredients
  

  • 1.5 pounds boneless, skinless chicken thighs (or breasts) Trim any excess fat if using thighs.
  • 1 cup honey
  • ½ cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups mixed veggies (such as broccoli, bell peppers, and carrots) You can use any combination of vegetables based on preference or availability.
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 green onions, sliced (for garnish)
  • sesame seeds (optional, for garnish)

Instructions
 

  • Begin by preparing the chicken. If using chicken thighs, trim any excess fat. Place the chicken in the slow cooker.
  • In a mixing bowl, combine honey, soy sauce, minced garlic, and minced ginger. Stir well to create the sauce.
  • Pour the sauce over the chicken in the slow cooker, ensuring that it's well-coated.
  • Add the mixed vegetables around the chicken in the slow cooker. Drizzle the olive oil over the vegetables and sprinkle with salt and pepper.
  • Cover the slow cooker with its lid. Cook on low for 4 hours, or on high for 2 hours, until the chicken is fully cooked and tender.
  • Once done, shred the chicken in the slow cooker using two forks and stir everything together to combine the flavors.
  • Serve hot, garnished with sliced green onions and sesame seeds, if desired.

Notes

You can use any combination of vegetables based on your preference or seasonal availability.
If you like a spicier kick, consider adding red pepper flakes to the sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving.
