Ingredients
  

  • 2 lbs boneless, skinless chicken thighs
  • ¼ cup honey
  • ¼ cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, sliced for garnish
  • 1 tablespoon sesame seeds optional, for garnish

Instructions
 

  • In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger, sesame oil, salt, and pepper. Mix well to create the marinade.
  • Place the chicken thighs in the slow cooker and pour the marinade over them, ensuring that the chicken is well-coated.
  • Add the sliced carrots, chopped bell peppers, and broccoli florets to the slow cooker, arranging them around and on top of the chicken.
  • Cover the slow cooker with the lid and cook on low for 6 hours or until the chicken is tender and fully cooked (internal temperature should reach 165°F).
  • After cooking, shred the chicken in the slow cooker using two forks and stir the vegetables and chicken together.
  • Serve the chicken and veggies warm, garnished with sliced green onions and sesame seeds if desired.
  • You can customize the vegetables based on your preference, using zucchini, snap peas, or any other favorites.
