Ingredients
  

  • 1.5 lbs beef chuck roast, cut into 1-inch cubes
  • 1 lb baby potatoes, halved You can substitute with regular potatoes, cut into chunks.
  • 4 cloves garlic, minced
  • ½ cup unsalted butter (1 stick)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • to taste fresh parsley, chopped For garnish.

Instructions
 

  • Begin by preparing the beef. Cut the beef chuck roast into 1-inch cubes and place in a large mixing bowl.
  • In a separate bowl, mix together the minced garlic, salt, pepper, thyme, rosemary, and Worcestershire sauce. Pour this mixture over the beef cubes and toss until well-coated.
  • Add the halved baby potatoes to the slow cooker. Spread them out evenly on the bottom.
  • Layer the seasoned beef cubes on top of the potatoes in the slow cooker.
  • In a small saucepan, melt the butter over low heat. Once melted, pour the butter over the beef and potatoes in the slow cooker.
  • Add the beef broth to the slow cooker, ensuring that the ingredients are mostly submerged in liquid.
  • Cover the slow cooker with the lid and cook on low for 6 hours until the beef is tender and the potatoes are fork-tender.
  • Once cooking is complete, garnish with fresh chopped parsley before serving.
