- 1.5 pounds beef sirloin, cut into 1-inch cubes
- 4 medium potatoes, diced (about 2 pounds)
- ½ cup unsalted butter (1 stick)
- 8 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
In a large mixing bowl, add the beef cubes, salt, pepper, rosemary, and thyme. Toss until the beef is evenly coated with the seasonings.
Peel and dice the potatoes into 1-inch pieces.
Place the seasoned beef and diced potatoes into the slow cooker. Pour in the beef broth and Worcestershire sauce, stirring gently to combine.
In a small saucepan over low heat, melt the butter with the minced garlic. Allow the garlic to sauté for about 2 minutes until fragrant, but not browned.
Pour the melted garlic butter over the beef and potatoes in the slow cooker. Stir to ensure everything is evenly coated.
Cover the slow cooker and set it to low heat. Cook for about 6 hours, or until the beef is tender and the potatoes are cooked through.
Once cooked, give the dish a gentle stir and serve warm.
For added flavor, you can include vegetables like carrots or peas.
This dish pairs well with a simple green salad or crusty bread for dipping.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or on the stovetop.
