  • 1 cup Unsalted butter softened
  • 0.5 cup Sugar
  • 0.25 cup Light brown sugar tightly packed
  • 1 Egg yolk large
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract optional
  • 2 ¼ cups All-purpose flour
  • 2 ½ tablespoons Colorful nonpareils optional

  • In a large bowl, cream the softened butter with sugar and light brown sugar until it’s light and fluffy.
  • Add the egg yolk, salt, vanilla extract, and almond extract. Mix until fully combined.
  • Gradually add flour and mix until a soft dough forms. Fold in nonpareils, if using.
  • Divide the dough into two parts and shape each into a 2-inch log. Wrap in plastic and chill for 120 minutes.
  • Unwrap the dough and cut into ¼-inch slices. Place on a parchment-lined tray.
  • Prepare the pressure cooker with a trivet and water. Place cookie tray on trivet.
  • Cook on high pressure for 12 minutes. Use quick release and let cookies cool slightly.
