Instructions
In a large bowl, cream the softened butter with sugar and light brown sugar until it’s light and fluffy.
Add the egg yolk, salt, vanilla extract, and almond extract. Mix until fully combined.
Gradually add flour and mix until a soft dough forms. Fold in nonpareils, if using.
Divide the dough into two parts and shape each into a 2-inch log. Wrap in plastic and chill for 120 minutes.
Unwrap the dough and cut into ¼-inch slices. Place on a parchment-lined tray.
Prepare the pressure cooker with a trivet and water. Place cookie tray on trivet.
Cook on high pressure for 12 minutes. Use quick release and let cookies cool slightly.
