Instructions
Cream together butter, sugar, and light brown sugar until fluffy.
Add egg yolk, salt, vanilla, and almond extract. Beat to combine.
Gradually mix in the flour until a dough forms.
Fold in Nonpareils if using. Do not overmix.
Divide dough in half and shape into 2-inch-wide logs.
Wrap logs tightly in plastic wrap. Chill in refrigerator for at least 2 hours.
Preheat oven to 350°F and line baking sheet with parchment paper.
Slice logs into ¼-inch slices. Place 1 inch apart on baking sheets.
Bake 10–12 minutes or until edges are just golden.
Cool on baking sheet before serving or storing.
Notes
Dip cooled cookies in melted chocolate and add extra sprinkles for a festive finish. Dough may be frozen up to 3 months.
