  • 1 cup unsalted butter softened
  • ½ cup sugar
  • ¼ cup light brown sugar tightly packed
  • 1 egg yolk large
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract optional
  • 2 ¼ cups all-purpose flour
  • 2 ½ tablespoons colorful Nonpareils optional

  • Cream together butter, sugar, and light brown sugar until fluffy.
  • Add egg yolk, salt, vanilla, and almond extract. Beat to combine.
  • Gradually mix in the flour until a dough forms.
  • Fold in Nonpareils if using. Do not overmix.
  • Divide dough in half and shape into 2-inch-wide logs.
  • Wrap logs tightly in plastic wrap. Chill in refrigerator for at least 2 hours.
  • Preheat oven to 350°F and line baking sheet with parchment paper.
  • Slice logs into ¼-inch slices. Place 1 inch apart on baking sheets.
  • Bake 10–12 minutes or until edges are just golden.
  • Cool on baking sheet before serving or storing.

Notes

Dip cooled cookies in melted chocolate and add extra sprinkles for a festive finish. Dough may be frozen up to 3 months.
