Crispy, flavorful, and perfectly seasoned, these Skillet Breakfast Potatoes are the ultimate side dish for any morning meal. Quick and easy to make, they start with a quick steam in the microwave before getting pan-fried to golden perfection. A bold blend of Cajun seasoning, smoked paprika, and Italian herbs adds irresistible flavor, while a touch of chicken bouillon enhances the depth. Serve them hot, garnished with fresh parsley, for a deliciously satisfying start to your day!
First, you heat your pressure cooker’s skillet function or a compatible pan with olive oil on medium. You want the oil hot but not smoking.
Add the diced potatoes right in and sprinkle on the Cajun, onion and garlic powders, smoked paprika, Italian seasoning, and chicken bouillon powder. Stir well so every piece gets coated.
Secure the lid with the sealing ring in place. Set your pressure cooker to cook at high pressure just long enough to make those potatoes tender but not falling apart. About 5 minutes usually does it.
When cooking’s done, perform a quick release to let the steam out fast. This prevents overcooking and mushiness.
Remove the lid and stir the potatoes. Now switch to sauté mode again to crisp ‘em up.
Cook uncovered, stirring occasionally, for about 10-15 minutes until you see golden brown edges forming and you smell that irresistible aroma.
Finish with fresh parsley scattered on top before serving right away. Eat ’em hot for best texture and taste.
