In a bowl, mix together salt, coriander, cinnamon, nutmeg, thyme, and black pepper.
Rub the seasoning onto both sides of the chicken thighs.
Heat a skillet over medium-high heat and add the butter.
Add the seasoned chicken in a single layer and cook each side for 5–6 minutes or until golden brown and cooked through.
Remove chicken and set aside. In the same skillet, add brown sugar and stir until it melts and bubbles.
Add apple slices and a bit of salt to skillet. Cook 5–7 minutes, stirring occasionally, until apples soften.
Return the chicken to skillet. Spoon the apples and sauce over chicken.
Reduce heat and let everything warm through for another 2–3 minutes.
Garnish with fresh thyme or rosemary if desired.
Serve warm with syrupy apple cider sauce spooned on top.
Notes
Cool leftovers before storing to prevent sogginess. Store in airtight containers and reheat gently with splash of water or cider.
