Easy to make and delicious Stir-fry noodles that are loaded with shrimp and veggies. It is so filling, tasty, and is ready in just about 30 minutes. A dish the entire family will love.

  • 1 pound Large Shrimp peeled and deveined
  • 1 tablespoon Olive Oil or peanut oil
  • 3 cloves Garlic minced
  • 1 medium Carrot julienned or shredded
  • 1 Red Bell Pepper cut into thin strips
  • 8 ounces Spaghetti Noodles whole grain or lentil
  • 3 cups Broccoli Florets
  • 2-3 Green Onions thinly sliced
  • 2 tablespoons Toasted Sesame Seeds
  • 1 teaspoon Freshly Grated Ginger
  • 2 tablespoons Honey or agave
  • ¼ cup Low-sodium soy sauce or coconut amino
  • ¼ cup Fresh Orange Juice
  • 2 tablespoons Hoisin Sauce
  • 2 teaspoons Sesame Oil
  • ¼ teaspoon Chili Flakes optional

  • Heat olive oil in your skillet or wok over medium-high heat.
  • Toss in the minced garlic and sauté it about 30 seconds till fragrant.
  • Add the shrimp and cook until they turn bright pink, about 3 to 4 minutes.
  • Stir in carrot and red bell pepper then cook 2 to 3 minutes until softened.
  • Drop in broccoli florets and keep stir-frying for another 3 to 5 minutes.
  • Meanwhile, pressure cook your spaghetti noodles following package instructions.
  • Add noodles to the skillet, toss to combine all ingredients.
  • Season with salt, pepper, and garnish with green onions and sesame seeds.

Notes

Use any noodles of your choice. Raw shrimp works best. Toss in other veggies if desired. Store leftovers in fridge for up to 3 days.
