Shrimp Stir Fry Noodles: A Pressure Cooker Tale

Easy to make and delicious Stir-fry noodles that are loaded with shrimp and veggies. It is so filling, tasty, and is ready in just about 30 minutes. A dish the entire family will love.

  • 1 pound Large Shrimp peeled and deveined
  • 1 tablespoon Olive Oil or peanut oil
  • 3 cloves Garlic minced
  • 1 medium Carrot julienned or shredded
  • 1 Red Bell Pepper cut into thin strips
  • 8 ounces Spaghetti Noodles whole grain or lentil spaghetti
  • 3 cups Broccoli Florets
  • 2 to 3 Green Onions thinly sliced
  • 2 tablespoons Toasted Sesame Seeds to garnish
  • Salt & Pepper to taste
  • 1 teaspoon Freshly Grated Ginger for zing
  • 2 tablespoons Honey or agave
  • ¼ cup Low-sodium soy sauce or coconut aminos
  • ¼ cup Fresh Orange Juice
  • 2 tablespoons Hoisin Sauce
  • 2 teaspoons Sesame Oil to finish
  • ¼ teaspoon Chili flakes if you like a little heat

  • Cook spaghetti noodles according to the package instructions. Drain 'em well and set aside so they don’t soak up too much sauce later.
  • Heat your pressure cooker’s saute function with olive oil over medium-high heat. When warm, toss in garlic and sauté for about 30 seconds till fragrant.
  • Add your shrimp, cooking until they turn pink and opaque - about 3-4 minutes. You’ll notice the scent getting stronger.
  • Stir in carrot strips, red bell pepper, and broccoli florets. Cook for 5 to 7 minutes till veggies get tender but still have some crunch left.
  • Mix soy sauce, honey, fresh orange juice, hoisin sauce, sesame oil, grated ginger, and chili flakes in a bowl. Pour that savory-sweet combo over shrimp and veggies in the cooker.
  • Now seal the lid, making sure float valve is closed. Set to high pressure for 2 minutes. You’ll see the steam cues start and the cooker begin its work.
  • Let it do a natural release for about 5 minutes, then carefully switch to quick release to dump out the rest of the steam. Watch that float valve drop before you open.
  • Stir in cooked noodles and green onions well, season with salt and pepper, and sprinkle with toasted sesame seeds before serving up that yum.

Notes

Use any noodles of your choice. You can use whole-grain noodles or a high-protein option like lentil or chickpea noodles. Raw shrimp works best. Get them fresh or frozen. You can buy them peeled and deveined. Toss in any other veggies that you may like. Zucchini would be great. Try not to overcook the shrimp. It will turn rubbery. Store leftovers in the fridge for up to 3 days.
