Ingredients
  

  • 4 slices thick crust bread e.g., sourdough
  • 1 ripe avocado about 200g
  • 400 g large shrimp peeled and deveined
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley chopped
  • optional chili flakes for heat

Instructions
 

  • Preheat your oven to 400°F (200°C). Place the bread slices on a baking sheet and drizzle with a little olive oil.
  • Toast the bread in the oven for about 5-7 minutes, or until golden brown and crispy.
  • While the bread is toasting, heat olive oil in a skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  • Add the shrimp to the skillet, season with salt and black pepper, and cook for approximately 2-3 minutes on each side until they are pink and opaque. Remove from heat.
  • In a mixing bowl, mash the ripe avocado with a fork. Add lemon juice, salt, and black pepper to taste. Mix until well combined.
  • Spread a generous layer of the avocado mixture on each slice of toasted bread.
  • Top each slice with the garlic shrimp. If desired, sprinkle with chili flakes and chopped parsley for garnish.
  • Serve immediately while the bread is still warm.

Notes

Ensure the shrimp are fresh and properly deveined before cooking.
You can customize the recipe by adding other toppings like diced tomatoes or feta cheese.
This dish pairs well with a chilled white wine or a refreshing herbal tea. Enjoy!
