Preheat your oven to 350°F.
In a mixing bowl, combine sliced onions, potatoes, tomato paste, tomato sauce, and seasonings.
4 medium baking potatoes,
16 oz can tomato paste,
8 oz can tomato sauce,
1 tsp garlic salt,
Few dashes pepper
Grease the casserole dish and layer half of the vegetable mixture.
Spread 2 cups of cooked rice evenly over the mixture.

Add browned ground beef and drained kidney beans on top.
¾ lb ground beef,
15 oz can red kidney beans
Top with remaining vegetable mixture, cover with foil, and bake for 30 minutes.
Remove foil and bake for additional 15 minutes until potatoes are tender.
Serve hot, optionally with corn or green beans.
