1 spoon or spatula
- 4 pieces bone-in, skin-on chicken thighs About 1.5 lbs.
- 1 lb baby potatoes Halved.
- 2 cups broccoli florets
- 1 cup carrots Sliced.
- 6 tablespoons unsalted butter Melted.
- 6 cloves garlic Minced.
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- to taste salt
- to taste pepper
- for garnish fresh parsley Chopped.
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the melted butter, minced garlic, thyme, rosemary, paprika, salt, and pepper. Whisk until well combined.
Place the chicken thighs on one half of the sheet pan and brush them generously with the garlic butter mixture.
In the same bowl, toss the halved baby potatoes, broccoli florets, and sliced carrots with the remaining garlic butter mixture until evenly coated.
Spread the vegetables on the other half of the sheet pan, ensuring they are in a single layer.
Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the vegetables are tender and slightly caramelized.
Remove from the oven and let it rest for 5 minutes. Sprinkle with chopped fresh parsley before serving.
Feel free to add or substitute any of your favorite vegetables based on the season or what you have on hand.
To save time, you can prep the ingredients ahead of time and store them in the refrigerator.
For a crispier skin on the chicken, you can broil for a few minutes at the end of the cooking time, but keep a close eye to prevent burning.
This dish pairs well with a simple green salad or rice to round out your meal.
