Sheet Pan Chicken Pita with Herby Ranch

  • 1.5 lbs Boneless skinless chicken breasts cut thin
  • 4 pieces Pocket style pita bread
  • 1 cup Greek yogurt plain and full fat
  • ¼ cup Fresh dill chopped fine
  • ¼ cup Fresh parsley chopped fine
  • 4 cloves Garlic minced and divided
  • 3 tablespoons Fresh lemon juice
  • 3 tablespoons Olive oil divided
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • Salt divided
  • Black pepper divided
  • 2 cups Lettuce shredded iceberg or romaine
  • 1 medium Cucumber sliced thin

  • Preheat your oven to 400 degrees Fahrenheit so it’s ready when you are.
  • Whip up your herby ranch dressing. In a bowl mix Greek yogurt, dill, parsley, half the minced garlic, lemon juice, olive oil, paprika, cumin, and salt and pepper to taste. Set it aside to let flavors mesh.
  • Marinate chicken. In a separate bowl, toss chicken with rest of garlic, olive oil, paprika, cumin, and salt and pepper. Let it sit for about 15 minutes.
  • Spread that marinated chicken out on a sheet pan in a single layer. Pop it in your heated oven for 20 to 25 minutes until cooked through.
  • During the last 5 minutes of baking, warm pita bread in oven too. This gives them just the right softness and warmth for stuffing.
  • Take chicken out, let it rest a few minutes, then slice it up. Fill each pita with the sliced chicken, drizzle herby ranch dressing on top, add your shredded lettuce and cucumber, and you’re good to go.
