Preheat your oven to 400 degrees Fahrenheit so it’s ready when you are.
Whip up your herby ranch dressing. In a bowl mix Greek yogurt, dill, parsley, half the minced garlic, lemon juice, olive oil, paprika, cumin, and salt and pepper to taste. Set it aside to let flavors mesh.
Marinate chicken. In a separate bowl, toss chicken with rest of garlic, olive oil, paprika, cumin, and salt and pepper. Let it sit for about 15 minutes.
Spread that marinated chicken out on a sheet pan in a single layer. Pop it in your heated oven for 20 to 25 minutes until cooked through.
During the last 5 minutes of baking, warm pita bread in oven too. This gives them just the right softness and warmth for stuffing.
Take chicken out, let it rest a few minutes, then slice it up. Fill each pita with the sliced chicken, drizzle herby ranch dressing on top, add your shredded lettuce and cucumber, and you’re good to go.
