SESAME CHICKEN BOWLS

Ingredients
  

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • ΒΌ cup sesame seeds
  • to taste salt and pepper
  • as needed cooked rice or quinoa for serving

Instructions
 

  • In a mixing bowl, combine diced chicken with soy sauce and sesame oil. Let it marinate for about 10 minutes.
  • Sprinkle cornstarch over the marinated chicken and toss to coat evenly.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces in a single layer and cook for about 5-7 minutes until browned and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, add broccoli, bell peppers, and snap peas. Stir-fry for about 3-4 minutes until vegetables are tender-crisp.
  • Add minced garlic and ginger to the vegetables and stir-fry for another 1-2 minutes until fragrant.
  • Return the cooked chicken to the skillet and toss with the vegetables. Sprinkle sesame seeds over the top and mix well for 1-2 minutes.
  • Season with salt and pepper to taste.
  • Serve the sesame chicken mixture over cooked rice or quinoa in individual bowls. Garnish with chopped green onions.

Notes

Feel free to customize the vegetables based on your preferences or what's in season.
For added flavor, you can include a drizzle of additional sesame oil or a splash of rice vinegar just before serving.
This dish retains well and can be used as meal prep for lunch containers.
