  • 2 cups rice The base for absorbing all the flavors.
  • 4 cups vegetable broth Adds rich taste and moisture.
  • 1 onion Chopped, gives a nice sweetness once sautéed.
  • 2 cloves garlic Minced, brings that punch you can’t skip.
  • 1 bell pepper Diced, adds color and crunch to your dish.
  • 1 teaspoon paprika Offers a little smoky warmth to everything.
  • Salt and pepper To taste, your seasoning to brighten the dish.
  • 1 tablespoon oil For sautéing and adding a bit of richness.
  • Water If needed, just to adjust after adding broth or for personal taste.

  • First, heat a tablespoon of oil in that pressure cooker on medium heat. You wanna get it nice and hot but not smoking.
  • Next, toss in the chopped onion and minced garlic. Stir often until you see onions turn translucent and soft.
  • Then, add the diced bell pepper and cook those for about 3 minutes, getting a bit of snap but letting them soften up too.
  • Now, sprinkle in your rice with paprika, salt, and pepper. Stir well so the rice gets coated with all them flavors.
  • Pour the vegetable broth right over this mix and crank up heat until it starts boiling.
  • Once boiling, seal the lid, make sure the sealing ring is in place, and wait for that float valve to rise signaling full pressure.
  • Lower your heat and cook under pressure for about 20 minutes. When time’s up, listen for the valve hiss and release pressure carefully. Fluff rice with a fork and serve it hot for that tender pull.
