from your local Asian market or produce aisle

cooking oil

mayo or Greek yogurt

Sear your sausages, chop them fine, and set them aside.
Scramble your eggs, reserving 2 tablespoons for the sauce.
In a bowl, combine sausage, eggs, cheese, jalapeno, and cilantro. Mix well.
Take one dumpling wrapper at a time, add 1 tablespoon filling in center.
Brush wrapper edges with water, fold and seal dumplings.
Heat oil in nonstick skillet over medium heat. Add dumplings and brown bottoms 2–3 minutes.
Add 2 tablespoons water to skillet and cover. Steam for 5 minutes until wrappers are translucent.
In a small bowl, whisk reserved egg with mayo or Greek yogurt. Add jalapeno if desired.
Remove dumplings from skillet and serve hot with dipping sauce.

Notes
If you're tight on time, use pre-cooked sausage or pickled jalapenos. Mix sour cream with hot sauce for an easy sauce shortcut.
