  • 5 Jones All Natural Pork Sausages seared and chopped into small pieces
  • 4 eggs scrambled with 2 tablespoons reserved for sauce
  • cup shredded cheese your fave kind!
  • 2 tablespoons chopped jalapeno for that spicy hit
  • 2 tablespoons chopped cilantro to keep it fresh
  • Fresh Dumpling Wrappers from your local Asian market or produce aisle
  • 1 tablespoon cooking oil for perfect browning
  • 3 tablespoons mayo or Greek yogurt to mix into dipping sauce
  • 1 tablespoon diced jalapeno for the sauce, optional but dang good
  • Salt and pepper for taste, always important

  • Sear your sausages, chop them fine, and set them aside.
  • Scramble your eggs, reserving 2 tablespoons for the sauce.
  • In a bowl, combine sausage, eggs, cheese, jalapeno, and cilantro. Mix well.
  • Take one dumpling wrapper at a time, add 1 tablespoon filling in center.
  • Brush wrapper edges with water, fold and seal dumplings.
  • Heat oil in nonstick skillet over medium heat. Add dumplings and brown bottoms 2–3 minutes.
  • Add 2 tablespoons water to skillet and cover. Steam for 5 minutes until wrappers are translucent.
  • In a small bowl, whisk reserved egg with mayo or Greek yogurt. Add jalapeno if desired.
  • Remove dumplings from skillet and serve hot with dipping sauce.

Notes

If you're tight on time, use pre-cooked sausage or pickled jalapenos. Mix sour cream with hot sauce for an easy sauce shortcut.
