Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper if desired.
In a mixing bowl, use an electric mixer or whisk to combine the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold in half of the fresh raspberries into the cream cheese mixture. Set aside the remaining raspberries for topping.
Roll out the puff pastry on a lightly floured surface and cut it into small squares, approximately 3 inches by 3 inches.
Place about one tablespoon of the cream cheese and raspberry mixture in the center of each pastry square.
Fold the corners of each pastry square over the filling to create a pocket or bite-sized shape, pressing to seal the edges.
In a small bowl, beat the egg and brush the egg wash over the tops of the pastry bites for a golden finish.
Place the bites on the prepared baking sheet and bake in the preheated oven for about 10-12 minutes, or until golden brown.
Remove from the oven and allow them to cool slightly before serving. Top with additional fresh raspberries if desired.
