  • 1 cup dark brown sugar packed
  • 12 tablespoons unsalted butter room temperature, cut into pieces
  • ½ cup heavy whipping cream room temperature
  • ¾ teaspoon sea salt
  • 2 teaspoons real vanilla extract

  • Put your brown sugar and butter in the pressure cooker’s pot. Set the cooker to a low saute setting if you got one.
  • Whisk constantly while they start melting together. You might feel some resistance but keep at it until smooth.
  • Slowly pour in the heavy cream while whisking to combine everything nice. Be ready as it might hiss or spit a bit — dang, just keep whisking.
  • Seal your pressure cooker lid and set it to cook on high pressure for 3 minutes.
  • Once the time’s up, do a quick release to let out that pressure fast but carefully.
  • Open the lid, then immediately give it a good whisk to smooth out the caramel.
  • Turn the heat to low and keep whisking for 3-5 minutes. You’ll see it thicken as it cools a little and gets glossy.
  • Remove from heat, stir in sea salt and vanilla extract. Give it one last whisk and set aside to cool before drizzling.

Notes

Store your caramel in an airtight container in the fridge for up to 2 weeks. It thickens a lot when cold. Microwave in short 5 to 10-second bursts and stir to make pourable. Or let sit at room temperature for about an hour to soften. You can also freeze cooled caramel for up to two months, defrost overnight in fridge.
If your caramel separates, whisk constantly to recombine. Using a vanilla bean? Add seeds and pods with the cream and simmer for extra flavor, discard pods before serving.
