Pour the chicken stock into your pressure cooker and set it to boil over medium-high heat. Watch for the float valve to pop up.
Stir in the oyster sauce and both soy sauces to the bubbling broth for a quick flavor boost.
Add the dried Chinese noodles into the pot. Lock the lid and set timer per package (approx. 4–6 mins).
When cooking ends, allow a few minutes for natural pressure release to complete before opening lid.
Quick release the lid, then stir in bok choy. Let it cook 1–2 minutes until tender-crisp.
Stir in fresh green onions. Add a splash of dark soy sauce now if desired and taste to adjust.
Notes
Optional: Add sesame oil or white pepper at the end to jazz it up. Use natural release for best noodle texture.
