Ingredients
  

  • 2 cups rolled oats
  • 4 cups almond milk or milk of choice
  • 1 cup pumpkin puree not pumpkin pie filling
  • 4 tablespoons maple syrup or honey
  • 2 teaspoons pumpkin spice blend
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions
 

  • In a medium saucepan, combine the rolled oats and almond milk. Bring to a gentle simmer over medium heat, stirring occasionally.
  • Once the mixture is simmering, add the pumpkin puree, maple syrup, pumpkin spice blend, vanilla extract, and a pinch of salt. Stir everything together until well combined.
  • Continue to cook for about 3-5 minutes, or until the oats are creamy and have absorbed most of the liquid. Remove from heat.
  • Allow the oatmeal to cool slightly before portioning it into airtight jars or containers.
  • Optional: Top each jar with your desired toppings, like nuts, seeds, or dried fruits for added texture and flavor.
  • Seal the jars and refrigerate. The oatmeal will keep in the fridge for up to 5 days.
  • To serve, simply grab a jar, heat it in the microwave, and enjoy!

Notes

You can adjust the sweetness by adding more or less maple syrup according to your taste.
If you prefer a thicker consistency, reduce the amount of almond milk. For a creamier texture, consider using coconut milk.
Feel free to experiment with toppings or add-ins like chia seeds, flaxseeds, or even chocolate chips for a twist.
