Ingredients
  

  • 2 cups rolled oats
  • 2 cups unsweetened almond milk or any milk of your choice
  • 1 cup canned pumpkin puree
  • ¼ cup maple syrup or honey
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • to taste optional toppings chopped nuts, whipped cream, or extra cinnamon

Instructions
 

  • In a mixing bowl, combine the rolled oats, almond milk, canned pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  • Stir the mixture well until all ingredients are fully combined and the oats are submerged in the liquid.
  • Divide the mixture evenly among four airtight containers or jars.
  • Seal the containers and place them in the refrigerator. Allow the oats to soak overnight, or for at least 4 hours.
  • In the morning, give the oats a good stir. Add toppings of your choice, such as chopped nuts, whipped cream, or a sprinkle of cinnamon before serving.

Notes

You can adjust the sweetness by adding more or less maple syrup based on your preference.
Feel free to substitute other milk types or add-ins like chia seeds or yogurt to customize your overnight oats.
These oats can be stored in the refrigerator for up to 4 days, making them a great meal prep option.
