- 2 cups rolled oats
- 4 cups water or milk Dairy or non-dairy.
- 1 cup canned pumpkin puree
- ½ cup brown sugar Adjust according to taste.
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- optional toppings e.g., chopped nuts, dried fruit, maple syrup.
In a medium saucepan, combine the rolled oats and water or milk. Bring the mixture to a boil over medium heat.
Once boiling, reduce the heat to low and stir in the pumpkin puree, brown sugar, cinnamon, nutmeg, vanilla extract, and salt.
Cook the oatmeal over low heat for about 5-7 minutes, stirring occasionally, until the oats are tender and have absorbed most of the liquid.
Remove from heat and let the oatmeal sit for a couple of minutes to thicken further if desired.
Serve the pumpkin oatmeal in bowls, topped with your choice of chopped nuts, dried fruit, or a drizzle of maple syrup.
Feel free to adjust the sweetness by adding more or less brown sugar based on your preference.
For a creamier texture, you can use all milk instead of water.
