  • 0.5 cup blended 2% cottage cheese creamy protein-packed base
  • 2 large lemons zest only
  • 1 tablespoon fresh lemon juice
  • 0.25 cup honey natural sweetness
  • 1 cup plain unsweetened almond milk smooth and dairy-friendly
  • 2 teaspoons vanilla extract warm flavor notes
  • 0.25 cup chia seeds thickener, healthy
  • pinch salt to bring all flavors together
  • 1 large egg for richness and thickening
  • 2 egg yolks to add richness and help thicken gently

  • Toss blended cottage cheese, lemon zest, fresh lemon juice, honey, almond milk, and vanilla extract in your blender. Pulse or blend till everything’s smooth with no lumps.
  • Pour mixture into a bowl. Whisk in chia seeds and a pinch of salt. Seeds will start absorbing liquid immediately.
  • In another bowl, whisk the large egg and two yolks together well.
  • Slowly temper eggs by dripping lemon mixture into eggs while whisking nonstop to avoid curdling.
  • Pour tempered eggs back into blender with lemon mixture. Blend until combined and silky smooth.
  • Return pudding base to bowl, cover, and refrigerate for at least 4 hours or overnight to set.
  • Serve chilled with optional lemon zest garnish.

Notes

Store leftovers in airtight container in fridge up to 4 days. Use small jars for portioning. Freeze with caution as chia texture may change. Reheat gently or serve cold.
