  • 1 ½ pounds boneless skinless chicken breast cut into ½-inch cubes
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ginger powder
  • 1 teaspoon arrowroot or cornstarch
  • 1 ½ tablespoons toasted sesame oil
  • 1 tablespoon avocado oil divided
  • ½ teaspoon red pepper flakes
  • 1 ½ tablespoons minced garlic about 4 cloves
  • 3 cups cooked white rice
  • 2 scallions sliced

  • Toss chicken cubes with salt, pepper, ginger powder, and arrowroot until evenly coated.
  • Heat half the avocado oil in a skillet over medium-high heat. Brown half the chicken for 5-6 minutes, flip and cook evenly. Repeat with remaining oil and chicken.
  • Lower heat to medium. Add sesame oil and red pepper flakes, stir for 30 seconds until fragrant.
  • Add minced garlic and stir for 1 minute, being careful not to burn.
  • Return cooked chicken to skillet and stir to coat with garlic oil mixture. Cook for 2-3 minutes.
  • Serve hot over cooked rice. Garnish with sesame seeds and scallions.
  • Optional: For thicker sauce, mix additional arrowroot with water and stir into skillet just before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a little water to keep sauce texture. Can be frozen and thawed overnight before reheating.
