Ingredients
  

  • 1 pound potatoes, diced (about 3 medium potatoes)
  • 1 pound sausage, sliced (such as Italian or breakfast sausage)
  • 1 medium onion, chopped
  • 2 bell peppers, chopped bell peppers, chopped (any color)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper to taste
  • fresh parsley for garnish (optional)

Instructions
 

  • Begin by washing and dicing the potatoes into small cubes. If desired, you can peel them before dicing.
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the diced potatoes. Season with salt, pepper, garlic powder, and paprika. Stir to coat the potatoes in the seasonings.
  • Cook the potatoes for about 10 minutes, stirring occasionally, until they start to soften and turn golden brown.
  • While the potatoes are cooking, slice the sausage into rounds or half-moons.
  • Add the sliced sausage, chopped onion, and bell peppers to the skillet. Stir to combine with the potatoes.
  • Continue cooking for an additional 10-15 minutes, stirring occasionally until the sausage is cooked through, the vegetables are tender, and the potatoes are crispy and browned.
  • Taste and adjust the seasoning if necessary. Remove the skillet from heat and garnish with fresh parsley, if desired.
