  • 4 pork loin chops not too thick
  • ¼ cup all-purpose flour for dredging
  • 1 large egg beaten
  • 1 cup panko breadcrumbs for coating
  • 3 tablespoons butter for frying
  • 3.5 tablespoons all-purpose flour for roux
  • 1 tablespoon curry powder
  • 1 tablespoon garam masala
  • teaspoon ground cayenne pepper for heat
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 onion sliced

  • Preheat the oven to 400°F (200°C).
  • Dredge each pork loin chop in flour, then dunk in egg, and press in panko breadcrumbs.
  • Heat butter in a skillet and cook breaded pork chops 3-4 minutes each side until golden brown.
  • Transfer chops to a baking tray and bake for 10-15 minutes.
  • In a saucepan, melt butter and mix with flour for roux. Add curry powder, garam masala, and cayenne; stir for 2 minutes. Add water gradually, stirring until smooth.
  • Add carrots and potatoes, simmer for 10-15 minutes until vegetables are tender.

Notes

Serve warm with a side of steamed rice.
