Pizza Grilled Cheese in Your Pressure Cooker

Pizza grilled cheese combines two of my all-time favorite comfort foods: pizza and grilled cheese! Toasty grilled bread and an ooey gooey cheesy middle.

  • 1 Pressure Cooker with sauté mode

Ingredients
  

Main ingredients

  • 4 slices thick sliced bread such as Artesano bread
  • 3 ounces shredded mozzarella cheese gooey and melty
  • 2 tablespoons pizza sauce plus extra for dipping, gotta have that tang
  • 2 tablespoons shredded Parmesan cheese adds sharpness
  • 1 tablespoon thinly sliced fresh basil leaves for freshness
  • 1 pinch dried oregano classic pizza touch
  • 24 slices pepperoni thin slices, that perfect pepperoni bite
  • Butter to spread on bread, makes that crust golden

  • Butter one side of each bread slice nice and even. This helps crisp it up.
  • Layer 1.5 ounces mozzarella, half the pizza sauce, Parmesan, basil, oregano and 12 pepperoni slices on unbuttered side of two bread slices.
  • Top with remaining bread slices, butter side out. You’re makin a sandwich ready to brown.
  • Set your pressure cooker to sauté mode, let it preheat.
  • Place sandwiches in and cook til golden, about 3-4 mins each side. You gotta keep watch or cheese melts too fast.
  • Once browned and melty, carefully lift 'em out. Let cool slightly, that tender pull is a tease.
  • Cut sandwiches in half and serve with extra pizza sauce for dunkin.
  • If you want, do a quick release for fast cooling or slow release to keep 'em warm longer. Both work good.

Notes

Serve warm with extra pizza sauce for dipping.
  • Use pre-shredded mozzarella and Parmesan to save prep time.
  • Swap fresh basil with dried if you’re in a pinch, it still works.
  • Grab store-bought pizza sauce, sometimes ya just gotta go fast.
  • Butter bread ahead the night before and keep wrapped in fridge, so it's ready to hit the cooker.
